Vietnamese Beef Stew with Ginger

This is a great winter dish which is very very simple to make. When I was small, I always thought that this beef stew is more than complicated, actually we simply simmer all together for several hours, of course the more you cook the longer it will take. Just have to be patient :P

The 2nd version of Nem – Vietnamese spring roll

There have been so many names for our Vietnamese “nem” when it comes to …globalized :D lol People call our “Nem” egg rolls, spring rolls, blah blah n blah blah. Why dont we just call them Nem(s) – as they’ve always been, in their most original state? U know, just like in Vietnam we call pizzas “Pizza”, spaghetti “Spaghetti”, or burgers “Burger”- I think we should show the same level of appreciation to our Vietnamese food as they’re going international. Why change? Those’re THEIR names :) For Vietnamese nem, u can call them “nem” or “chả giò” – the two refer to the same thing, the only difference is that one (nem) is familiar to people in the North, while the other is often used by people in the South.

Vietnamese Spring Rolls – A Random Trial :P

Just done with my final exam in the most boring course ever: Research Method in International Business. Oh my God, believe me it was really boring. I even slept during my class once!!! But anyway it’s over now :D Yay yay :D Having a free afternoon is not something normal for me here, especially in my school with weird class schedules all year round, so I must do something – sth that I normally don’t have time to do :-?

Initially I wanted to make “bún chả”, which is a kind of rice noodle (not “phở”) with baked meat dipped in a light sauce made from Vietnamese fish sauce (“nước chấm”). But then I remember I still have some eggs left, which are about to expire :P haha So I decided to make Vietnamese spring rolls instead :D It’s such a long long long time I last had spring rolls, I think it was when I was still in Vietnam :) I have never made VNese spring rolls before, I only know the “theories” – I mean method :P , but have never made them myself. This is my very first trial :D and it turned out great, even though I do not have enough ingredients for “standard” Vietnamese spring rolls lol :D

Stir-Fried Shrimps

…were the very first thing I made as an abroad-studying student.

One year ago.

It was the very first time I did touch an uncooked shrimp :D It was 18 years before this girl dared to prepare shrimps for her meal !!!

I still remember when I was about 10 or 11, my mom brought home some fresh and ALIVE shrimps. She poured them all into the kitchen sink, waiting to be prepared and cooked. As a 100% urban girl, I really couldn’t tell if the shimps were still alive – uncooked, or not :| (Oh gosh this’s gonna happen to my next generations as well :D ) Curiously, I lifted my little finger and tried to touch them …. ARHHHHHHH This little girl shouted at her maximum volume when the shrimp jumped up when touched !!!! Believe me, THAT was scary – touching something u thought to be dead, but it actually was not.
