Egg White Cake

I have 4 egg whites left after making the cream puff n the cheesecake brownie (recipe will be posted later) so I was trying to find some recipe that uses up the 4 egg whites left in the fridge :D Yes, like any usual baker I first thought of macaroon/meringue/langue de chat/tuile/pavlova. The point was I didnt feel like making any of them. Pavlova would be solely a huge meringue without fruit n whipped cream. Meringue is too sweet :-s And for the other 3 it’s too hard (for me) to make sure I can make perfect baked goods. I was baking for my friend, so it’s better not taking any risk :D

Luckily I found this Egg White Cake from Nami-Nami. It requires very few ingredients and is so simple to make. The recipe yields a cake that is somewhat like sponge but lighter I think. UHm, thinking about making a chiffon – the one famous for being extremely light n moist. The only burden is that I dont have any chiffon pan in hand :( Kinda worried if my normal cake pan can hold the “sky-rise” of a normal chiffon :(

Omelette with cheese, pesto and ketchup

This is another quick n easy recipe for breakfast. Perfect with bread. Absolute choice for anyone who loves cheese n pesto (and lazy like me :P )

Ingredients:

Egg – 2

Rolled egg – A less simple version of omelette

This is a more complicated version of the normal omelette we often make for a quick meal. This egg roll looks quite hard to make, but actually it’s no different than making several omelettes and roll them together. For me, it’s even more simple than making a normal, flat omelette. I’ve always …struggled with keeping the flat omelette not broken into pieces when turned :|

Vietnamese Spring Rolls – A Random Trial :P

Just done with my final exam in the most boring course ever: Research Method in International Business. Oh my God, believe me it was really boring. I even slept during my class once!!! But anyway it’s over now :D Yay yay :D Having a free afternoon is not something normal for me here, especially in my school with weird class schedules all year round, so I must do something – sth that I normally don’t have time to do :-?

Initially I wanted to make “bún chả”, which is a kind of rice noodle (not “phở”) with baked meat dipped in a light sauce made from Vietnamese fish sauce (“nước chấm”). But then I remember I still have some eggs left, which are about to expire :P haha So I decided to make Vietnamese spring rolls instead :D It’s such a long long long time I last had spring rolls, I think it was when I was still in Vietnam :) I have never made VNese spring rolls before, I only know the “theories” – I mean method :P , but have never made them myself. This is my very first trial :D and it turned out great, even though I do not have enough ingredients for “standard” Vietnamese spring rolls lol :D
